Vinification ( Barafakas Xilia Xronia Red)
The winemaking process begins with a gentle 3-day cold soak to extract color and aroma before fermentation starts. The wine then ferments together with the grape skins at controlled temperatures between 20–24°C. Once fermentation is complete, the wine is carefully separated from the grape solids and transferred into 225-liter French and American oak barrels, where it matures for 15 months.

This wine boasts a deep red color and a rich, inviting bouquet. Expect layered aromas of sour cherry, gooseberry, mint, chocolate, and cedarwood—a complex and elegant profile.
